Home-Made Pizzas - For a 'Foodie' Mid-Week Date!

Mid-week date? Do DIY Pizzas! It’s a chance for you to check out your date's cooking skills and mix things up a bit!...(With flour, eggs and milk..). We’ve got a super easy recipe for make it yourself scone-based pizzas, but feel free to adapt as you like, just keep that takeaway number nearby…

Scone-Based Pizza x 4
Ingredients

The Base

1 mug of self-raising flour
½ mug of butter
1 egg
150ml Milk
Paprika
Italian herbs
Salt & Pepper

The Sauce

1 can chopped tomatoes
1 red onion
Garlic puree
Capers
Olives
1 Red Chilli
4 rashers of bacon, cut into small pieces (leave out for a veggie recipe)

The Toppings
Grated Mozzarella & Cheddar
….And anything you want!
This particular recipe worked well with mushrooms, pesto and rocket.


Method

1. Pre-heat the oven to 180 and get dough making…


 
2. Combine the butter and flour to a bread crumb consistency, then mix in your herbs & spices. Make a little well in the middle of the mixture.Whisk together the milk and egg and slowly add this to the flour stirring to make a dough like mixture.

3. Adding more flour if necessary, use hands to mould the dough into a ball and leave to rest

4. For the sauce, chop onions and fry lightly in olive oil, with the garlic puree and chilli. After 3 or 4 minutes add in the bacon – fry until slightly browned.
5. Stir in the capers, olives and chopped tomatoes – bring to the boil and leave to simmer for 20 minutes. Season to taste.

6. Whilst the sauce is simmering, roll out your dough into circular shapes. Or hearts, or your name, or a rectangle, whatever takes your fancy. Then bake in the oven for 10 minutes, or until slightly cooked.

7. Remove bases from the oven and load with your toppings! Return to the oven for approx. 15 minutes, or until the crusts are nice and crisp!
